I wanted to share some of my lastest and GREATEST recipes...
Still trying to get rid of some of those baby pounds... but I really don't like bland food... so here are some yummy recipes that we have been having at the buettemeyer household lately...
This is spaghetti squash. Let me preface this by saying that I DO NOT like squash... ew... but I have always heard how this is a good substitution for pasta... and after keeping my eyes open for it at the store they finally had it last week and I wanted to try it, mainly just to say I did... and I fell in love.
47 calories for 1 cup of Spaghetti Squash vs 200+ for pasta... You can't beat that. And its the gift that keeps giving because as you eat these is just more and more...
So I am posting the recipe that I kind of made up... but it was so delish. Even if you dont think you will like it (like i did) you should try it.
Spaghetti Squash
1 spaghetti squash makes at least two servings, depending on the size.
cooking spray
2 tbsp butter (i use i cant believe its not butter spread)
salt to taste
pepper to taste
sprinkle of Parmesan cheese
Preheat oven to 425 degrees.
Slice Squash in half and remove seeds... (save for toasting if you like, taste just like pumpkin seeds!)
Spray cooking spray on a baking sheet or dish and then spray on inside of squash...
Season with salt and pepper.
Place squash upside down on baking sheet.
Bake for 30-40 min, or until flesh is soft.
After you remove it from the oven, scrape inside with a fork and you will see the "meat" turn into "noodles". Let butter melt on the squash while doing this. Season with salt and pepper and add some parmesan to taste and EAT! So good, so good.
And our latest guilty pleasure... Peanut Butter Pie. The easiest recipe in the world...
I have fun with this recipe.
What you need:
1 graham cracker pie crust
3/4 c. peanut butter (I use crunchy, because I like this pie with a little crunch)
8 oz. cool whip (i use FF!)
4 oz. cream cheese (also use weight watchers FF)
1 cup powdered sugar
1/4 c. Chocolate chips
Chocolate syrup (i use SF)
Mix: PB, cream cheese and powdered sugar.
Fold in cool whip and 1/4 c. chocolate chips.
Put in pie crust. Decorate as you want. I either drizzle with SF chocolate syrup or grate some dark chocolate on top.
Refridgerate until eating, or we like to freeze it!
Enjoy. :)
This pie is so rich, I can't imagine what it would be with the full fat version. But its delish and not too high on calories! It makes 8 small slices or 6 big. :)
