April Showers...

It is another cold and rainy day in NW Arkansas. I'm over the cold and the rain. It just makes me want to curl up with a blanket and watch TV all day. But since I am really not watching TV anymore, I will blog instead.

Its been a busy week, and will also be a busy weekend. I am a little bummed. I hurt my back lifting a patient at work a few weeks ago and I have been trying to push through the pain and run in order to still be able to run tomorrow in a 5k, but I have decided that I need to go to the dr. So I am going today and I am hoping he won't tell me that I can't run tomorrow, but I am afraid that is what is going to happen.

I am super excited about taking a part in the SITS spring into action event starting on Monday. I have been wanting to expand my blogging and learn some more photography things, so this seems like the perfect way to do both.

Hudson has been really sweet the past few nights, and he loves to love on daddy. I got a few cute pics to share!



Mexican Casserole
My husband said this meal was restaurant quality. Thought this recipe needed to be shared if it was that good.

Ingredients
1 lb ground beef, turkey or venison (I used venison)
6 tortillas
1 can refried beans
1 can black beans
1 can whole kernel sweet corn
1 large jar of salsa
2 cups or so of Mexican blend cheese
2 taco seasoning packets
green onions
sour cream
mayo
guacamole

1. Brown the meat and add 1 taco seasoning packet like you were making regular taco meat
2. Spray a 9 x 13 baking dish.
3. Layer two tortillas on bottom.
4. Layer on refried beans, meat, corn, black beans, salsa and cheese
5. Repeat this step 2 times and on the top layer just do refried beans and cheese.
6. Bake in oven at 350 for 30 minutes or until bubbly.

For the Sauce, mix 1/2 c sour cream, 1/2 mayo c and 1/2 packet taco seasoning.

Top with Sauce and chopped green onions and serve with a side of tortilla chips and guacamole.



This meal would be perfect to take to a new mom or a pot luck! Or just easy to throw together since most of us have all of these things in our pantry.
