Meal Planner Tuesday-- link up!

Here is what the Buettemeyer family is eating this week!

Monday


I made Hungry Girl's "The Whole Enchilada Soup" and cheese quesadillas for dinner last night. I followed her recipe except I let it cook in the crock pot for 7 hours on low, the flavor was amazing and only has 109 calories per cup, you will probably find out very quickly that I love soup. Tuesday
Pan Seared Tilapia, broccoli with cheese sauce, mashed potatoes and 1/2 sandwich round

For the tilapia... I buy the frozen tilapia in individual packages and then put them in a bowl of warm water still in the package before I am ready to cook them.

-Heat 1 tbsp olive oil on Medium in a large sauce pan.
-Season tilapia with salt, pepper and italian seasoning and place seasoned side down, then season the other side.
-Cook for 3 min (or until brown) and flip.
-Fish is done when it flakes easily with a fork about 5 min total.

Wednesday
Red beans and rice with corn bread (I use the Zatarans box of RB and R and add a little smoked sausage, and who doesn't LOVE jiffy corn bread??)

Thursday
Lloyd's honey BBQ pork on Hawaiian sweet rolls and mixed steamed veggies (easy for Bryan to make on a 12 hour shift night)

Friday
leftover RB and R or Enchilada soup, if it makes it that long.

I'll post pictures as I make the meals this week so everyone can see how yummy it looks, I had everything in my pantry/fridge for these meals already so there isn't as much fresh stuff as we would usually eat but I'm trying to use up what we have so I don't have to pack and move as much this weekend.

I also thought I would share that I try to eat very well for breakfast and lunch so I can eat a little bit more at dinner. My breakfast is usually a weight watcher smoothie (2 pts!) with some fruit and sometimes PB added or fiber plus cereal.

Lunch is usually Progresso soup with a WW point value of 1-3 with either a small quesadilla or some crackers and chips or some days a turkey sandwich with chips. I have been eating some fruit and yogurt in the morning for a snack and some veggies in the after noon (stuck on edamame right now, yum yum!).
