E-Meals

Y'all! I am so excited about today's post.

You all know I have taken some time off from blogging while I have gotten into the groove of having two kids, working night shift and just juggling life in general. I recently stopped nursing Rhett and I can now take my weight loss to a new level. I sort of posted about that the other day. I recently had an opportunity come up that will make my weight loss and my LIFE in general, easier... and goes with my mantra of saving money.

I am teaming up with eMeals to help me in my weight loss journey. I don't know about you, but I do a whole lot better with weight loss when I have a plan and when someone tells me what to do. With eMeals I get just that.

What exactly IS eMeals, you ask?


eMeals is an online meal planning solution with an established base of hundreds of thousands of satisfied customers. They offer a wide variety of lifestyle meal plans including Clean Eating, Paleo, Low Fat, Low Carb, Natural & Organic, Portion Control, Gluten Free, Classic and Vegetarian meal plans. Users can choose from 12-month, 6-month or 3-month subscription terms. There are also additional lunch and breakfast meals plans to make life even THAT much easier.

I used eMeals when Bryan and I first got married and loved it. It was great as a newlywed to have great recipes to use every night, especially when I was first learning to cook. That was almost 5 years ago. I was amazed when I got back on to eMeals to check out their plans and to see how much it has evolved.

I cook dinner most nights of the week but I have a couple of problems.

First, sometimes I get bored with the same old things and we order pizza at the last minute because nothing "sounds" good. That is no good for the diet or the pocket book.
Second, Bryan and I do not eat left overs. I don't know why, we just don't. So if I make a big meal it is all great that night, we eat about a fourth of it and the rest sits in the fridge until I throw it away a few days later.
Third, Hudson doesn't eat anything that we eat. I am trying to change that by trying new things. I put at least one thing that we are eating on his plate for dinner. Our rule is that he can choose not to eat his dinner but if he tells me that he is hungry at bedtime his only choice is a banana, after a few nights of having to cook him something at 9 pm, I was over that.
Fourth, I go to the store and buy a bunch of random "healthy" things that end up getting thrown away because I don't have a plan of how to use them.

So that is where eMeals comes in. They give you a 7 day plan of meals for dinner. You choose your plan and if you don't like it you can change it! They give you a comprehensive grocery list for the week and you can even pick which store you shop at so it will give you an idea of sales and the prices! That way food doesn't get wasted and I have a plan for a new meal every single night. I am hoping this leads to less pizza, more money in our pocket and a smaller waste! The meals for the week are typically $40 or so for groceries for SEVEN dinners. That is great!

Portion Control Meal Plans
Now here is my plan. I chose the Portion Control plan. I am "unofficially" following Weight Watchers right now and also doing the Insanity workouts 5x a week. When I was looking at the different plans it was really hard for me to choose. I like this one because it gives point values to the meals and it looked like it was something that both Bryan and Hudson would enjoy eating too (You can look at sample plans on the website before you commit, love that). I chose the meal plan for 2 so that we won't have left overs and if we do it is just one serving that Bryan can take in his lunch.

I also love that eMeals has an iPhone app. I am lucky if I ever remember to bring my list to Wal-Mart and this saves me the pain of trying to remember everything or make another trip because it is super accessible on my phone!

I am starting our meals tomorrow and I will be updating with my workout schedule and plan for the next month. I am so excited about this that I thought I would go ahead and share one of their recipes so you could check it out for yourself. I made these for breakfast this morning and Hudson and I BOTH devoured them. Yum, just in time for the first full day of fall.

Pumpkin Chocolate Chip Muffins via eMeals



By replacing half of the flour in this recipe with whole wheat flour, you get an extract dose of heart-healthy and filling fiber. Pumpkin makes these muffins moist and adds Vitamins A, C, E, and K and fiber, not to mention the flavor of fall. Adding a small amount of chocolate chips makes these muffins sweet enough for a dessert that you can feel good about.
Pumpkin Chocolate Chip Muffins

Ingredients
  • 1½ c all-purpose flour
  • 1½ c whole wheat flour
  • 2 c sugar
  • 2 t baking soda
  • 1½ t pumpkin pie spice
  • ½ t salt
  • ⅔ c canola oil
  • 3 eggs, lightly beaten
  • 15 oz can pumpkin puree
  • ½ c mini chocolate chips
Instructions
  1. Preheat oven to 350. Combine all dry ingredients.
  2. Combine oil, eggs, & pumpkin in separate bowl.
  3. Add wet ingredients to dry mixture stirring until just moist. Stir in chocolate chips if using.
  4. Scoop batter into 28 muffin cups coated with cooking spray or lined with paper liners.
  5. Bake at 350 for 18-20 mins or until inserted toothpick comes out clean.

  1. I would have never thought of combining pumpkin and chocolate chips together in a muffin. Interesting idea I think I'll have to try. Going to pin it to my muffin board right now for later. Thanks!
