My Momma's Applesauce Cake

This Mother's Day, I appreciate my mom more than ever. After losing my sweet mother-in-law in December and having to watch and experience life with my husband and sister-in-law as they cope with their first months of not having her around, I just soak in and appreciate my relationship with my mom so much more.

My mom is my very best friend. I am so blessed beyond imagine to have the relationship with her that I have. She is my number one supporter, my cheerleader, my coach, my mentor and now my one phone-call-away doctor. She has a quiet and sweet spirit. She is filled with compassion and has such a caring nature. She has a relationship with the Lord that has always inspired me to be better. She has been by my side at all of my life's important moments.


For Mother's Day, Hudson made me a little picture at school that makes me so proud.

He told his teacher that he loves it when I paint with him and plant flowers with him. That warms my momma's heart to know that he considers those times special.

So for my mom....

I love my mother because she goes on Mission Trips with me. It is my most favorite thing we do together. We have been to Mexico around ten times together on Medical Mission trips and they are some of the most cherished times I have with her. We talked the other day and have our sight's set on Africa next maybe. I love her servant's heart and how she is willing to bend over backwards to help others. I hope to be like her always.

Happy (Early) Mother's Day, Mom. I love you so much. Thanks for being there for me always.

So in honor of Mother's Day, I thought I would share one of my mom's super yummy recipes.

My Momma's Applesauce Cake
1/2 c. Butter, softened
1 c. Sugar (I have sub. 1/2 Splenda here too)
1/2 tsp. Cinnamon
2 Tbsp. Cocoa Powder
1 egg
1 egg white
2 c. flour (I used half wheat flour)
1 1/2 tsp. baking soda
1/2 tsp. salt
1 can (2 cups) applesauce

Mix well and pour into a greased 9x12 pan. 
Sprinkle cake with 2 Tbsp. of sugar and 1/2 bag of chocolate chips. 
Bake at 350 for 35-40 minutes
