Freezer Meals!

I posted yesterday that Jordan and I made FIFTY freezer meals for Tony for Father's Day. We went grocery shopping at 11 am and didn't finish cooking until 5 pm. It was a long day! This would be a great gift for someone you know that needs help with some home cooked meals, if you have a baby coming or if you're a teacher and have the summer off to do this! I have also seen where a group of friends all cook one or two meals and then swap, SUCH a good idea (ps to my local friends, we should totally do this).

We had 25 packages of meals and figured he would at least get two servings out of each of them, if not more, so this should last him awhile! Oh and we already gave these to him so I am not ruining the surprise by posting!

Here is what we made:
Poppyseed Chicken
Spaghetti Casserole (boil noodles, make a meat sauce and top with mozzarella, bake 35 min or until bubbly)
Pot Roast in bags for the Crockpot
Chicken roll ups (baked and then put 5 per container for a quick meal)
Beef Enchiladas (Brown beef, add enchilada sauce, cheese, beans, onions... whatever you want. Tony doesn't like beans so I left them out. Roll up the filling mixture in large tortilla top with more enchilada sauce and cheese, bake 350 for 25-30 min or until bubbly, these little pans fit 4 enchiladas)

Add ons:
3 Boxes of Garlic Toast
Bag of whole wheat rolls
Pecan Chocolate Chip Cookie Dough Balls (I haven't made these yet, but will soon. Use this recipe, add pecans (Tony won't eat dessert unless it contains pecans) roll into balls and put pan in freezer, once frozen place in freezer bag and can bake as many at a time as wanted)

You could also give tortilla chips, salsa, salad, etc.

  2. I've been a follower and prayer warrior for our family through this journey. What an incredible gift of love shown to him. We are expecting our second baby and your freezer meal idea makes me want to do something like this for our chaotic time of transitioning after baby gets here to being a family of four.

  3. that is an awesome gift idea! I've always done large batches of freezer meals before I had a baby. Food swapping intimidates me b/c I just don't have the time to dedicate to making a ton of meals at the same time.

    1. From what I have seen about food swapping is that you get like 8 friends and everyone makes 8 of one dish (or two dishes) so everyone ends up with 8-16 different dishes. I found that the hard part was browning all the meat, cooking and shredding the chicken, etc. So once you do all of that its easy to assemble and you might as well do 8 of them. I'm thinking I need to find some friends to do this! :)
