Surviving Crazy September Schedules with Minute® Ready to Serve Rice

how busy the fall season can be and I like to eat healthy but as
easily as possible. I have two super active little ones so meal time is often

I love soup recipes in the fall so I came up with a SUPER quick and easy soup recipe using Minute® Ready to Serve Rice that you can make in 15-20 minutes since you don't have to wait for the rice to cook!
Tortilla Soup
2 cups chopped chicken breast, cooked
2 16 oz can chicken broth
1 cup salsa
1 onion, diced
1/2 bell pepper, diced
1/2 cup crushed tortilla chips
1 cup Minute® Ready to Serve Rice (your choice of flavor)
1/2 tsp garlic
1 tsp cumin
1 tsp chili powder
Salt and Pepper to taste
Bring everything in the pot to a boil and simmer for 10 minutes. Top with Avocado, Cilantro, Sour Cream, additional chips and/or Cheese! And enjoy!
