Chicken Quinoa Soup and Some Encouragement



Chicken and Quinoa Soup
Chop meat of one rotisserie chicken
1 can chopped green chilis
1 can crushed or diced tomatoes
2 bell peppers, diced
1 onion, diced
1 cup quinoa (uncooked)
6 cups chicken broth (more or less depending on desired thickness)
Cumin
Fajita Seasoning
Salt and Pepper
(Or whatever seasoning you want, to taste-- I used Flavor God Garlic Lovers and Everything Spicy)

Add all to pot, bring to a boil and simmer for one hour, or until Quinoa is cooked!

Serve with some chopped cilantro and avocado! Yum!

... and I'll leave you with this. Two years ago I was terrified to make a change and embarrassed of how I looked. I told Bryan SO many times, just wait, I can do it on my own... I'll eat healthy, work out harder...  blah blah blah and then finally a few months later I had had enough. I decided that I needed accountability. I didn't just HAVE the money to buy a BB program. I had to sell things around the house but I made enough doing that for PiYo, and it has literally changed my life. I am SO glad that I got over myself and decided to start.
