Tasty Tuesday! The Good, The Bad... My thoughts on the process.

I've been wracking my brain for today's post. Trying to come up with a topic, and I really didn't plan ahead so what you're going to get instead is my thoughts and feelings about going to a whole food plant based diet.
I'll start with this. It's changed my life. I am still learning the ins and outs of WFPB living. I never sought out to be a vegan. I actually was 100% against it. Some days I eat some cheese, I don't always read all the labels and on the weekends I have some meat if I want it. But most of the time I don't want it, and when I eat it I feel sick afterwards. I am not a crazy animal rights activist. I am eating this way because I feel good and I have been learning and SEEING the health benefits. My skin has taken a 180 degree turn. I don't even feel like I need makeup anymore. The above pictures are in the same lighting, same time of day, no filter or makeup, just 5 weeks apart. The first right as I started and the second a few days ago. I look younger and my skin looks brighter, thats a win-win! First time in my adult life that I haven't had breakouts!

I am eating healthy and crazy beautiful foods. I like tofu and brussel sprouts, who knew?
But it's not all roses and daisies. I just finished a round of (vegan) 21 day fix, and I didn't lose any weight, I actually gained a couple of pounds BUT my body composition is changing from lifting weights. My stomach is flatter than it's ever been since having kids. I jumped right into a round of 21 day fix extreme and I am following the regular meal plan but making it vegan instead of following the vegan one because I think I was eating too many carbs, three days in and I am down over 3 lbs by cutting down my carbs. I ate pizza last week (GASP ;)) real pizza, and I was SO sick. Like sick sick. And then bbq and felt so bloated, meat just isn't good for my body anymore. It's been hard getting into the groove and learning the new way to do things. 

What does a day look like for me? 

Vegan Shakeology for breakfast most days... (with power greens and a banana blended in)
Lunch is a salad with arugula, sprouts, bell pepper, grape tomatoes, 1/4 avocado and homemade balsamic vinegrette.  Or that salad with some vegan pizza thats left over from the night before. And a La Croix.

Dinner is a variety. Dinner is the hardest because I have to actually cook something. I've been getting Blue Apron and Hello Fresh Vegetarian boxes and thats been helpful to try new things.

So I guess that's my hodge podge of thoughts about WFPB living for now. It's a learning process but I feel GOOD and that's the biggest thing for me! My workouts are better than ever and I am getting so much stronger. I'm not planning on quitting any time soon!
