Tasty Tuesday! What IS a WFPBD?

What exactly IS a Whole Food Plant Based Diet?! 

It's a diet RICH in WHOLE foods. Unprocessed foods. Foods that come from the Earth.

NO: Meat, Fish, Eggs, Milk, Butter, Gelatin, Etc.
YES: Fruit, Veggies, Nuts, Legumes, Whole Grains

What I've noticed since going WFPB?

-Increased (natural) Energy
-Better Complexion (NO breakouts and less under-eye darkness!)
-Weight Loss
-Sleeping Better
-Stabilized Moods
-No more bloating
-Regular digestion, decreased indigestion
-NO allergy problems, no need for my usual daily meds (can I get an AMEN?!)

I've debated posting this, and honestly I need to do another picture (maybe after I get my eyebrows done tomorrow ;)) but this shows how much my skin cleared in the first month. I feel like it's even a bigger change now, I don't even need makeup or concealer. Just the diet change has brightened my skin and the whites of my eyes! 

Ok so what the heck do we eat?! Well here is some of the yummy things we've been eating this week:

I was in a crunch and needed to eat lunch on the go so I whipped up a PB&Strawberry wrap with
carrots and grapes to take with me in the car! Easy and delish!

And this recipe I can share. It's from Hello Fresh but I revamped it and made it my own. OH also... And my cart full of yummy goodness. If you would have told me two years ago that this is what a cart full of groceries to feed my family for a week looked like- I would have never believed you. I was eating processed "diet" foods, drinking Diet Coke, lots of meat and dairy and had minimal veggies and fruit in my cart. And I wasn't losing weight despite all the "diet food". Now it's completely shifted. My cart is 80% fresh produce. No "diet" foods and minimal processed anything. No dairy or meat for me. My kids and husband still have a little. It's been a slow lifestyle change and I am feeling better than ever and down over 40 lbs!
